Pork shank
The new entry of the last three years is the pork shank
of our production obtained from the processing of
half carcases.
Seasoned with a dedicated tanning, it is baked in the oven
for about 3 hours; it is taken to a special blast chiller cell
and then vacuum-packed with its own
sauce the next day, stored in the cell ready
to be sold.
Ideal for bars, pubs and restaurants in general, only from
heat in the oven for 15 minutes or in the microwave
for 3 minutes, to be paired as a second course with potatoes,
mashed potatoes or sauerkraut.
