The prized black truffle is certainly the noblest of the black truffles. Its aroma is sweet and pleasant and has always been used a lot in Italian and international cuisine. The color is black outside and black-burgundy with whitish veins inside, the shape is rounded. It is harvested from the beginning of December to mid-March. It can be used both raw and cooked.
