Raschera PDO
Semi-fat, short or medium-aged, semi-hard cheese that takes its name from Alpe Raschera at Mount Mongioie in the Municipality of Magliano Alpi (CN). Its square shape is characteristic, a thin, smooth and soft crust, gray or reddish in color, sometimes with yellow hues and reddish blooms. The white or ivory-white colored paste is quite consistent and elastic with very small, scattered and irregular holes. On the palate it is sweet, with lactic sensations, of cooked butter and toasted notes. Minimum seasoning of 30 days.
