Our gluten-free mix for bread, pizza and focaccia is designed for professionals, artisan workshops and the catering channel, ideal for the preparation of gluten-free, GMO-free and allergen-free leavened doughs. It is an extremely versatile mix, very easy to use (short preparation time), characterized by high water absorption (>80%). By using our gluten-free mix, it is possible to obtain a dough with excellent workability and a high level of hydration. This results in its great ease of use and good yield. It also makes it possible to obtain leavened products characterized by high volume, excellent structure (good alveolation) and great fluffiness.
