Passatelli - a typical dish from the north of the Marche region - are very rich in nutrients, as their dough contains fresh eggs, Grana Padano, flour and breadcrumbs, all flavored with grated lemon zest and nutmeg. This intoxicating mix of flavors goes well with all solutions, both in broth and with sauces. It is undoubtedly a first course, but from a nutritional point of view it can also be considered a worthy single dish, especially if accompanied with vegetable-based sauces.
