It is the most prized truffle. A true gastronomic pearl. It has a light yellow and greenish peridium. The pulp (Gleba), is grayish white to various shades of yellow but also decidedly nutty. The perfume, particularly marked and pleasant when ripe, recalls parmesan cheese. Ripens from early October to December.
