Cheese produced with mountain milk from the Bergamo valleys belongs to the category of semi-cooked cheeses. Cylindrical in shape, with a diameter of about 36/42 cm, a bare height of 9 cm and a weight of 10/12 kg. The paste is elastic, straw yellow in color, with widespread and regular holes. The very characteristic and aromatic taste recalls the ancient mountain flavors. It is an excellent table cheese, it goes perfectly with polenta.

The heart of our company, founded in 1915 in northern Italy where our business is concentrated, is the maturing and trading of cheeses.
