It is also called Asiago d'Allevo which means seasoned. It is a cheese made with cow's milk from a limited area. Left to mature for 3 to 8 months, the paste is compact and of a fairly intense straw color with small / medium-sized holes; the taste very tasty but still sweet.

The heart of our company, founded in 1915 in northern Italy where our business is concentrated, is the maturing and trading of cheeses.
