Giusti Organic Wine Vinegars are the result of experimentation on single-grape vinegars, that are obtained from musts of just one grape variety. The grapes from which we get these vinegars are organic, sustainable and ferment slowly and naturally. Both vinegars produced with Trebbiano and Lambrusco grapes are aged in barrels in order to soften their structure and give them particular aromas and essences. We use chestnut barrels for Trebbiano vinegar and Oak barrels for Lambrusco vinegar.

Giusti is the oldest producer of Balsamic Vinegar of Modena, founded in 1605 and awarded as sole supplier of the King of Italy.
The Giusti family, today at the 17th generation, obtains his collection of balsamic vinegars of different ageing drawing every year a limited quantity of the best vinegars from his own collection of ancient wood casks, the “Gran Deposito Aceto Balsamico di Giuseppe Giusti”.
