Pecorino DOP also has a tender form and benefits from a short maturation time(minimum 20 days) and is produced with milk that conform to the Consortium of Tuscany Pecorino producers criteria. The compact form has an opaque white colour, slightly chalky and is most invitingly tasty. The rind is treated with concentrated tomato paste and has a red colour.

of Fauglia. Today Stefano Busti, heir to this valuable tradition, manages the family-run company . He is personally involved both in the production and in quality control in order to preserve the quality of the products,which are still made with the same criteria as those of his forefathers.
