La Mischia is a semi-wholegrain pasta obtained from ancient durum wheats. Inspired by so-called participatory and/or evolutionary sowing, we retraced the steps once followed by peasants when sowing various durum wheats, to obtain types which best adapt to the climate and land of cultivation. Today, with this technique we have the opportunity to cultivate local durum wheats, protecting biodiversity while respecting cultivation methods and the rhythms of nature. The product obtained guarantees the numbered production of pasta.
