Pasta Jesce born from the indissoluble love of a family for his territory: Puglia. We only use ANCIENT VARIETIES of grains such as TIMILIA, MAIORCA and RUSSELLO, very rich of antioxidants like polyphenols, enzyme activator minerals such as Iron, Zinc and Manganese and with a very low Gluten Index which makes them highly digestible and fit for those who suffer from gluten intolerance or high sensitivity different from the celiac disease.

We, at De Cecco, only produce high quality pasta, respecting the tradition. To offer you an excellent product we select the best durum wheat grown in perfect climatic conditions all over the world. Each variety has its own virtue: fragrance, taste, colour, protein. In this way we are able to create the perfect blend and we ground it in our own mill. Then we mix the coarse semolina with the purest water of our source. After the bronze drawing and the slow drying, which can last up to 36 hours, the De Cecco pasta is ready. A long process but a simple recipe for over 190 years.

Recovering the centuries-old tradition, we use the best blends of durum wheat semolina, bronze dies and slow drying at low temperatures that gives pasta the recognizable pale yellow color. This process preserves the taste and nutritional value of the raw material, such as lysine, a protein component present in a quantity rather low in durum wheat, which deteriorates with high temperature.
