Finocchiona PGI is a typical salami of the tradition of the Tuscan region, and among all the specialities it is definitely the most traditional and tied to the Tuscan territory. The Production Disciplinary is the keystone of the production of Finocchiona PGI. The main ingredient is the seed and/or the flower of fennel that with its typical aroma gives the unmistakable taste to Finocchiona PGI. Selected ingredients are used with top quality fresh meat as well as seeds and/or fennel flowers such as salt, pepper, garlic and, optionally, wine.

The origin of the company dates 1958, when the two founding partners, Rocco and Enzo, began to butcher artisanally and in a rather precarious structure, two to three pigs a week. Through the years the activity developed both on the side of the markets served and on the side of the sources of supply. The company today covers an area of 3,800 square meters covered and develops three production lines employing 20 people.
