In the sixties, his two sons, Romano and Angelo, took the cooperative Cheese factory in Roncà. Today the third generation, the Romano’s sons Gildo, Giovanni and Letizia are managing the artisan cheese business and the family’s pigs farming. They creates superb cheeses: aged or cured, flavoured, from herding mountain cattle milk, cow’s milk, sheep’s milk and goat’s milk and a range of dry-cured cold cuts in respect of the environment, PDO and tradition.

Since 1979, the Consortium for the Protection of Asiago Cheese guarantees that only cheese that respects the production procedure can be called, recognised and sold as Asiago, handing down its tradition and strengthening its identity. The Asiago PDO supply chain comprises 1,595 dairy farms, 36 production companies and 6 maturing companies (data for 2016), which each year process more than 2,200,000 tonnes of milk.

Monte Veronese is an italian protected designation of origin cheese, typical of the Veneto region. The milk is obtained, transformed and processed in the northern part of the province of Verona. This is an area of mainly high hills, rich in fertile pastures. Cheese was produced here back before the year 1000. Two different types are now made: “full cream” Monte Veronese and “mature” Monte Veronese. These two types are made exclusively from cows’ milk, and not only differ in taste but also in their methods of production.
