Finocchiona PGI is a typical salami of the tradition of the Tuscan region, and among all the specialities it is definitely the most traditional and tied to the Tuscan territory. The Production Disciplinary is the keystone of the production of Finocchiona PGI. The main ingredient is the seed and/or the flower of fennel that with its typical aroma gives the unmistakable taste to Finocchiona PGI. Selected ingredients are used with top quality fresh meat as well as seeds and/or fennel flowers such as salt, pepper, garlic and, optionally, wine.
