Description

The "Burrata di Andria"P.G.I. is a fresh cheese produced with cow's milk and obtained from the union of cream and stringy cheese. The wrapper consists exclusively of spun dough that contains, inside, a mixture of cream and frayed spun paste (stracciatella), has the appearance of a bag of spun paste, white and shiny, with a rounded shape with a characteristic closure apical. The stuffing or stracciatella has a spongy consistency and is composed of hand-spun filt dough dipped in cream.
