The Consortium for the Protection of Salame Felino PGI was created in 2011 to protect and enhance the Salame Felino PGI and guarantee a safe and quality product for the consumers. Today the Consortium counts 14 producers that use and preserve the traditional processing method. The Consortium promotes the safeguard of production regulations and assists producers in optimizing the production process, by providing consultancy on legal, technical and scientific matters.
